Can we create custom fields under Party? Like Vendor Contact, Vendor Email, Vendor Address etc?

Not specifically for Parties, but you can create Custom Attribute Groups at any time and tag those to your Party documents, as well, and they function largely the same. Here’s a walkthrough for how to do it.
