There are situations where we are asked to send the DocuSign envelope to an admin who will reassign it to the correct signatory. When doing this, the “Name” Field will add the original recipient's name and, when reassign, the correct signatory’s name will overlap with the original recipient. How do we prevent the name being added prior to signature?

I think you may need to ask support to disable a setting called “Display SecureField initial value to all recipients”. This setting will show the pre-populated fields like Name to the initial signers and will place it on the document before it is their turn to sign. I think if you disable this setting, that should resolve your issue.
