Hypothetically I would like to control that the signer does not necessarily receive the final signed copy of a document

I understand that you are looking to control the delivery of the completed document to a signer and I will gladly share more details on the topic.
At this moment all signers in an envelope will always retain access to the documents through the web application.
As the sending account you are able to control only whether or not the document is attached within the email notification in Settings>Signing Settings>Envelope Delivery.
