No, once a DocuSign envelope is completed (all required recipients have signed), neither the sender nor anyone else can change the content of the signed documents without breaking the integrity of the file.

While an envelope is still in progress, it is possible for the sender to Correct the envelope. While they can’t change anything about the envelope that has already been signed (for example, they can’t replace the underlying document or move any of the field values entered by a prior recipient), it is possible during correction to add additional recipients and assign additional fields to future recipients, including themselves. They can’t change anything about the underlying document but can add additional Docusign fields. Once an envelope is completed by all signers, no further changes can be made.
There is a personal preference you can enable/disable in the My Preferences>Notification Preferences area of Docusign designed to send you a notification if “The sender corrects an envelope.” Also, the envelope history and certificate of completion will inform you of corrections that were made, by whom, and when.

Just to confirm my understanding: once I sign a document, that was sent to me already signed by the sender, the information cannot be changed because it’s completed. To clarify my concern, my mortgage broker mentioned that after they send the document signed, they could still make changes after me signing, which worried me. From your answer, it seems that after signing and completed, no information can be altered. I just want to double check because he was so sure of this. And, it is a concern for me.

Once an envelope is marked completed in DocuSign, it’s locked. No one can change the document you saw and agreed to when you signed it. Any attempt to alter the file afterward would either break the tamper-evident seal or require a brand-new envelope that you’d see and have to sign again. So your signature is always tied to the exact version you reviewed, and nothing can be added or changed behind your back.
