Hello,  I want to hide the left panel higlighted in the below image(screenshot 1) and I dont want user to drag signature field and then sign...instead I want the user to directly click on Sign as indicated in second document(Screenshot 2). Is there any way we can do this? I am getting this left panel while implementing Docusign ESignature action in salesforce Omniscript.

Thank you for reaching out, and welcome to the Docusign Community! We appreciate your question and assure you that we are fully committed to providing you with the best service possible.
It looks like it is a free-form signing. This is because no fields have been assigned to your recipients. To avoid such a situation, you must assign fields to the recipients before sending.
Now, if you are using Omniscript in creating your envelope, currently this is outside of our scope; however, with Omni, there is a way to map our templates and the following articles will show you how to do this:

Thanks Ma. Cassandra, This worked for me. I also have one follow up question. I created the recipient manually for the template and gave same name, email etc as mentioned in the Omniscript. Then assigned the fields to the recipient in docusign template and it started working. 

Our requirement is more dynamic...as we might have many different user who might be logging in and signing the document. Instead of adding the recipient manually in the docusign, is there any way to add recipients dynamically and assign them fields dynamically in the template either through integration or configuration?

Ultimately, the OmniScript integration is not owned/developed by Docusign, so we are not aware of its capabilities; however, you can reach out to the developers of this integration for more details. If they are leveraging the Docusign Managed Packages, then what they are looking to do is certainly possible. One example of this would be to add recipients via Merge Fields to dynamically populate the recipient placeholder roles. All of their fields could be saved in the template assigned to this placeholder recipient role that's dynamically populated upon sending:
