Date Time stamp on some of my documents but not all

I asked about this before. wondering if there is a way in the meantime to address this.
I have several documents which must show the date, time and timezone stamp next to the signature, but most of my other documents I cannot show this info. the global setting variant does not work for me. Ideally should a choice when pulling the data signed per template.
