Does anyone know of an open source (and up to date) Django integration or guide of the eSignature flow?

This is Alice, Developer Support Engineer at Docusign. It is nice to meet you.
We do not have an official Django guide or implementation, even open source, but we do offer our Python SDK officially which is open source, in fact, for interacting with our Docusign APIs:

The Python SDK should give a general guidance on how to implement Docusign back into a Python-based web framework like Django, and upon research it does seem the community is interested and developing Django solutions with Docusign, but unfortunately we can not comment officially on them.
