We would like to set up two or more different addresses as the recipient for a single signer, allowing that signer to perform the signing operation from any of those addresses.
Is this possible?

DocuSign technically does not restrict the matching relationship between the mail address and the name. As long as you meet the requirements of your local e-signature law. In terms of compliance, it can be evaluated by legal counsel.
