Thank you for reaching out here in the DocuSign Community.
You can apply changes to any envelope or recipient that has not been marked as completed. Which would also include changing the expiration dates on an envelope level.

These settings can be changed as long as they are not grayed out, if they are, you would need to contact your account admin so that they can enable the option that will allow an Account default override: https://support.docusign.com/s/document-item?bundleId=gbo1643332197980&topicId=pbj1578456352875.html&_LANG=enus
