Is there a way to get in-person signatures for a consent without their email; example- client comes in, I pull up consent template, they simply fill their name and sign 

An email address is typically required for any Docusign document (https://support.docusign.com/s/document-item?language=en_US&rsc_301=&bundleId=gav1643676262430&topicId=hak1578456316043.html&_LANG=enus), but practically speaking, a unique (preferably distinctive) placeholder email can be used for any participant who doesn’t have their own email address or with a document in which an email address is not expected.

In-Person signing only required the email address of the host, which would be you in this case. The full name of the signer is required to do in-person signing. The email address of the signer can be optionally entered so they receive a copy, but you can complete the transaction without selecting this.

The other solution would be to set up a PowerForm, where they can sign without you being the host and leading the signing ceremony. In this case you need to provide an email address to complete signing.
