I tried uplaoding the supplemental doc like my contract (as suggested in docusign video) but when I clicked on the 3 dots after I uploaded my supplemental there was not an option to make it supplemental. It just showing the supplemntal doc as part of the contract and not an attachement like I intended

If the feature is applicable to your Account plan or type then it should be an available option under those three dots. It sounds like it may not be part of you specific DocuSign Account plan. I do not see it specifically listed in the DocuSign plan features, so I suggest creating a DocuSign case and asking whether this feature is applicable to your account plan.
