How can set up a template to send a copy to certain people when certain checkboxes are selected

For this scenario you will want to add a Conditional Routing Group to your Signing Order. By working with Conditional Routing, you can add a conditional recipient that will be related to a trigger field in your document, in this case you can use your checkboxes as triggers.
