Editing a document in a template changes the entire document.

I have a new hire packet setup as a template.  It contains several documents.  The first document is 16 pages and I would simply like to delete some of these pages that are no longer needed, however, it moves my fields all around and drops some of the fields on the pages that I do want to keep.  I am thinking there has to be an easier way to edit templates that contain multi page documents.  This has also been the case when we have wanted to edit one or 2 fields or add pages to a doc.
