Can I have One Seat and Two Users since we are low volume?

Question

Have been confused by the Seat vs User scenarios, but think I’ve got it now. However, trying to figure out how I can add another User without adding more envelopes (seat). We would be lucky to do 40-60 in a year, but it would be very helpful if it wasn’t all me as User doing the work. Looking at older posts it looks like there was a way but now isn’t (without spending more money)?

Don’t need more envelopes so we don’t wish to pay for another license. If that’s not possible, what happens if I need to go on holiday?
