At this time, there is no functionality available to restrict users with "view and edit" permissions from editing the document name. Users with this permission level currently have the ability to modify all document attributes, including the name. But if you have anything in your mind which can help to prevent this, let us know.

I am planning for Capturing the Original Document name in one of the attribute fields. Can we use a smart rule if the document name is changed, it kicks off the WF and rename the Document with its original name (Using attribute Original document name field)

You can certainly capture the original document name in an attribute field. However, please note that if someone changes the document name, the smart rule approach will not be reliable. Even if you make the attribute non-editable, users can still manually change the document name directly from the folder view or through other areas where naming is accessible.

Additionally, smart rules cannot be triggered by document name changes alone, so renaming the document based on the original name stored in the attribute won’t be enforceable through workflow automation
 

The only way is to train users not to change the document name yet still if they want to, go ahead with editing the description.
