how can i get an excel spreadsheet exported from esig to a directory in CLM? I only see 3 options for export in esig under rules. If not is there a way to dump it to a CLM workflow and then put it into CLM?

You won’t be able to directly export an Excel file from eSignature (DocuSign eSig) into a CLM directory using rules, either export and upload into CLM documents and then refer it in the workflow.
