have just started using the program have done a few tests and it is dating the form as 1 day prior not the current date? I have looked in settings and can only see how to change the format of the date that appears on the form not the date its picking up?

Check your Profile settings for the Timezone settings. Select the Profile picture in the upper right after login then My Preferences, then Regional Settings from the left menu. Typically you would want it to match your computer settings but you can correct the Timezone if it is incorrect. If you cannot change your User Profile timezone (due to permissions), then you need to check with a DocuSign Admin to see what the Regional Settings are from an Account perspective and have it corrected.
