I have an agreement that is expiring in a few days. Is there a way to change the expiration date without the recipient knowing?

You can always "Correct" an envelope, but that typically (unless the Recipient/Signer turned off the notification) will send an email to the Recipient(s). I am unaware of any option to suppress the Notification from the Sender perspective.
