My name has been legally changed and I was able to update it in my account but the esignature will not allow me to update it. The fields are greyed out and I am a system administrator.

Thank you for reaching out here in the DocuSign Community.
That is expected, once a signature is created you can edit the signature style, however, the name can not be changed, you would need to create a new signature using the needed name, this goes for all users (admins and standard users), also, you can have more than one signature in case you want to keep the old one with the other name: https://support.docusign.com/s/document-item?bundleId=jux1643235969954&topicId=lrz1578456442739.html&_LANG=enus
