@StevenKing You cannot use a Text based field with number validation and have it accept a “%“. There are probably a few options, one would be to create a custom validation on a Text field and set a Regex to allow only numbers and a percent sign.  

Second if there always will be a percent sign then hardcode that into the document OR set that as a read-only Text field pre-adding the percent sign.
