I've sent a document to the WRONG email address - how do I now edit to send it to the new email address???

Locate the envelope under your Sent folder and use the "Correct" feature. As long as no action has been taken (most likely cause the email address was incorrect) then you can select "Correct" under the right hand menu dropdown, update the email address and Correct. This should send a new notification to the Recipient. You could also hit Resend.
