Is it possible to send multiple doc to one signatory as well as each of the doc to counter signatory as part of one transaction? E.g. Director signs multiple docs as one transaction, then each doc gets sent to individual employees for signature (with employees only seeing the doc that was for them to sign, no other docs)?

I understand you would like to send several documents to Signer 1 to have them signed, and then have Signer 2 only view their needed documents and have them sign those.
If the documents have to be separate then the envelopes will have to be separate, meaning that if there are 20 employees you will need to send 20 envelopes and the Director will have to sign each one going in a 1 on 1 manner.

I will have a look if we have the Document Visibility option, as it seems this could be a solution.
Alternatively, we could send all the docs to Signer 1 first, who can sign all docs with one action, then send each doc separately to all the individuals to counter-sign separately?

I would not recommend doing that, sending all the documents to the first signer and then re-uploading the signed document to separate one so that the other Signers can counter-sign, as that can invalidate the signature of, in this case, the Director. You would need to send the documents one by one, adding both the director and the needed signer on the same envelope.
