I would prefer it just have my company name and our "xxxxxx@xxxxxx.com" email address.

I concealed your email address for security reasons, as that is private information.
That can only be changed/removed by editing the Email Resource files, please view page 46, you can find the resource files by going to:
- Settings
- Brands
- Edit Default branding
The name that shows is the name on your account, so, you can also change the name on your account directly by going to:
- Manage Profile
- Select "My Profile Information"
- Change the name to the desired one
