Can you change the person authorized to provide the signature to someone else without having to resend the letter?

Yes, you can either correct the envelope and change the recipient and resend (please keep in mind that this resend would only affect those who have not signed yet, the ones who have will not receive it). Also, once a recipient completes their action (or the envelope), the system will not accept any further alterations.
