How can I view how many envelopes we have used and how many are left available?

Welcome to the Docusign Community and thank you for posting your concerns!
You can see how many envelopes your account has used by running an Account Activity Report (you would only be able to see account wide information if you are an admin). From there you can get the total of envelopes used and subtract it from the total of envelopes available on your account depending on your plan type. You might be able to see that information on your “Plan & Billing section under your Admin/Settings tab:
