Are you using Document Generation for eSignature?
If that is the case, then you should follow the steps outlined in the guides below on how to add sender fields to a document generation template:
Create a Sender Field With the Template Assistant
Insert Sender Fields and Dynamic Tables Into a Document
The reason why your anchor text is not working as expected within the basic eSignature application is that you are expected to use the Auto-Place feature instead. Anchor Text formatting is usually managed by existing third party apps such as Salesforce. More details on how to work with AutoPlace can be found, here:
