If I understand well your question, you would like to use the Sign Here field and other fields in your document, right? If so, you need to click in the Start button then click on Envelopes then click on Sending.
See the figure below:

In the created envelope you will add document(s), add recipients then in the document section you will add all necessary fields to be used in the signing process.
Now, if you do not see the option to Send an Envelope, but only see Use a Template that means your Admin has set the envelope’s creation only through a template.
