I'm noticing that some of our envelopes are being voided because they are expiring.  Is there a way you can undo an already voided envelope?  I have a customer asking for us to extend the envelope and I don't know how.

No.  To extend a specific envelope (that is still in progress), you can correct it, click on the "Edit" link next to Advanced Options, and adjust the number of days until expiration.  To change the number of days until expiration for your account, you can log into the admin console and go to the Reminders and Expirations page.
