How do I change the default email text and subject? Can it be tied to a template so that each form template has a different default subject/text that is customized?

The default for Email Subject and Email Body can only be set in a Template, so that each time the Template is used the corresponding envelope has the appropriate default text. Within Templates you can also select the "Customize email and language for each Recipient" so that each Recipient can have the appropriate email text sent when it it their turn to take action.
