I have created my first webform. I am wondering why when the esignature document is populated for signature, why the recipient is able to modify the mapped responses.

A Web Form is a way to collect data that is then entered in your eSignature’s template fields on your recipient’s behalf. This is the reason why your recipient can update their answer during the signing session, they will need to complete their assigned action in the envelope before the data is printed on the document.
