Document Visibility would need to be enabled by your account administrator (if they do not see the options, it is most likely disabled in the account, in which case you would need to contact Customer Support). For you to be able to select which document your recipients can view, your admin would need to set it as "Sender can set 'must sign to view unless Sender'" and save.
