If you want to Seal a document then you would need to speak to DocuSign and get this feature added to your account but that would probably cost you extra.
For stamps if you have this on the account you need to enable the feature in Admin > Sending Settings and select the Enable Signature Stamp Field.
When you send the envelope you can ask for a stamp instead of a signature and in your own profile you can upload the company stamp to your own account. Stamps can also be set at company level in Admin and users can use these and specify which ones to use.

I can see and enable the configuration for Stamps in my demo account, but cant see Seals.
