With DocuSign it is possible to attach excels during signing, but during the process it transforms the excel into a document, is there a configuration that keeps the excel as an excel attachment?

Welcome to the Docusign Community and thank you for posting your concerns!
Unfortunately all attached items (through the attachment field) are converted to a PDF and must be under 25 MB in size. The only way they can possibly remain in the same format is, having the sender add it as a document during the sending process and not requesting them as attachments during the the signing process nor a signature or field that can alter the document.
In the case you go through that route you would need to download the document as a separate file instead of combined: Add Attachments to a Document to Provide Supporting Information

Can you give more detail on how to implement this? I need to add an Xlsx file to an envelope, without it being converted to .pdf
