What is the best option for having a document updated yearly? I have a group of individuals who have already filled out/signed the document, but I need them to go in every year or so and make any updates to their circumstances in the document. Is it best to just send a new one along? Or should I copy the old one and then re-send? TYIA!

I suggest to send a new one, as the old one is finalised and the values they provided when initially signing the document are now part of the document that cannot be replaced or updated.
This sound like a good case to use a template and potentially a PowerForm or WebForm on top, so they can self-serve and create the document themselves without you creating every envelope manually each time.
You can share the link to the form via email in the call to action to update their circumstances.
