I sent a document for signatures, including my own and received the completion email notification. I then sign in and download, however when I try to open the document, I get an error “We can't open this file, something went wrong”. I have never come across this.

I’m sorry to hear that you are getting an error, I understand it shows when attempting to download the completed PDF.

Are you using some sort of API?

Do the other signers get the same result?

does this happen to this document only or do other documents show the error?
