New to using DocuSign. Seems pretty straight forward, but fields like numbers show they are locked and cannot be used in my Templates. What am I doing wrong?

I am sorry to hear that you haven’t been able to use the Number Standard Field, but I will share more details on the root cause of this behavior.
The fields and features that appear locked in the eSignature dashboard are usually not available to the plan configured for your account.
