Is there a way to edit just one document (remove and replace or add) to a packet of documents already created without having to start over in assigning all fields to all documents within the packet?

Thank you for reaching out here in the DocuSign Community. 

You can update your document (with no completed fields) in an in-progress envelope or in a template by clicking the three dots menu at the bottom right corner of your document, and selecting "Replace".

By replacing your document instead of deleting it, you will be able to retain its related fields and other configurations.
