Yes, the best way would be to add the conveyancer as a recipient with the needed date fields assigned to them, if the date has to go last, I recommend using a signing order and adding them as last: Set a Signing Order
If it has to be several days after the last signature, I also recommend pairing it with Delayed Routing which allows you to select a date of when you want the documents dated within a 30 day range: Add Delays Between Recipients in a Routing Order
