I have a document which is being signed by 19 different parties. One party has signed and was selected to specify its own witness. It seems, by error, the signee has signed (last week) but has entered their own details as the witness (but haven’t signed as a witness). Is it possible to cancel the original signature and resend to be signed and witnessed together?

I’m sorry to hear that your recipient wasn’t able to sign when they were added as a witness. I understand you are looking to cancel that envelope and resend.
Yes, you can void the envelope, however, any other signer that completed their part will have to sign again (it will not only affect the needed recipient), you don’t also need to create the envelope from scratch again, you can just create a copy of the voided one and send that: Copy Envelopes
