Hello, is there any way to control / modify the exact time that a reminder or modification is sent to a user for signing a document? i.e. I want that the users get a reminder/notification at 20.00 exactly.

Unfortunately, no, the reminders options would only set 2 different options:

A.- Number of days before sending first reminder

B.- Number of days between reminders
