If an employee leaves the organisation, is there a way to assign/transfer ownership of their envelopes to someone else in the team?

There are multiple ways to do it, but you need to have the rights for it.

or : Transfer Envelopes and Templates from the Custody Transfer Page

or : Transfer Envelopes and Templates Between Users from the DocuSign eSignature Admin Page, you select the user who leaves the company click on Actions and in the dropdown menu you will ahve access to the "Transfer Envelopes" mode.
