We have a new company name, how can I change the Default eSignature Account name to the new name?

@EFS You would need to have DocuSign Admin access to perform the steps to update the Account Name. If you have that Admin access, login, go to Settings, then Account Profile, then select Edit next to the Account Name, update and Save. Here is the DocuSign article:
