What are Document Templates?
Document Templates provide a centralized repository to create and manage documents used within Docusign and IAM, saving time and ensuring compliance. 

Key highlights:
Simplify document management: Create reusable templates for frequently used documents, so you never have to start from scratch again.
Centralized updates: Update boilerplate language in one place and have those updates reflected across all documents using that template.
Enhanced visibility: Easily identify which eSignature envelope templates include the same document for seamless updates.

Is this in production?   We are seeing this in the demo accounts.

The ATB in Word defaulted to document template. 

Where is the API documentation for document template?  I tried the template endpoints, and clearly with a new property documentTemplateId, the existing GET /templates/{templateId} fails to locate the document template.

Thanks for reaching out to the Docusign Community!

Yes, the Document Templates feature is available in production for all IAM plans. Currently, this feature is not supported in the eSign REST API. However, we are planning to introduce a performant Agreement Preparation API next year, which will enable standalone generation as well as gen and send capabilities.
