This is a bizarre restriction in Docusign - if I have shared access to multiple users documents, I should be able to search all of them at once. Instead I have to go and separately search the same search term across multiple different users.

Good point. This is a bizarre restriction and expanding search capabilities across various shared access accounts would be so beneficial!
