Whether it is possible to change the payload format of our webhook from XML to JSON. Our account is an enterprise demo account, and we are currently unable to locate the configuration option within our webhook settings to make this change.
Could you please confirm if this feature is available for enterprise accounts and provide guidance on how to update the payload format if it is?

Docusign Connect was initially based on XML payload (Legacy), before the JSON (REST v2.1) format was introduced.
I just checked my developer account and I can choose between the payload formats on creation:

Thank you for contacting Docusign Customer Support.
Our Docusign Connect objects cannot change format after it was created.
Since our system supports multiple Connect configuration, please create a new Connect object, then select the REST v2.1 Data format and copy all other values from the original object.
Once your REST2.1/JSON object is created you can disable your XML one.
